Smoothies have been a frequent habit of late. They're quick, easy, and use up the leftover fruit, spinach and milk in my refrigerator. And considering that grocery shopping has fallen to the bottom of the to-do list for... well... we're going on weeks now, these are really the only items I have anyway.
Watermelon Yogurt Smoothie
2 cups of diced watermelon
1 cup plain yogurt
2 Tbsp maple syrup
4 ice cubes of peach puree (in lieu of this, you could use 1 cup of frozen peaches)
1 cup of milk
1 Tbsp almond or peanut butter (optional)
Mix all ingredients in a blender and "smoothify"until the texture is consistent. Serve with a 1/4 cup of this granola.
