Weekly Roundup

What did I eat this week, you ask? I know you're all waiting with bated breath for me to tell you. Wait for it... wait for it...

Monday - Brown Rice Sushi
  • After stopping at two supermarkets on the way home (always carry a list so you don't forget things), I made these glorious little sushi rolls. I added roasted asparagus, shredded carrots, avocado, scallions, and sliced tofu pan-fried in BBQ sauce. The tofu was definitely the star ingredient. The technique to make these no-fail sushi rolls is here. Highly recommend.
Tuesday - Joy the Baker's Grapefruit Scones
  • I am still working off the last of the discount fruit I bought a couple weeks ago. One lonely grapefruit made these scones really stand out. No photo to share because I ate them so quickly. I adjusted the recipe and used all whole wheat flour instead.
Wednesday - Irish Soda Bread
  • You already saw this one here.
Thursday - Ate leftover Grapefruit Scones, Sushi (not together), and celebrated St. Patty's Day at The Angler.

Friday - Peach Banana "Ice Cream"
  • One frozen banana, one frozen peach, one cup of vanilla soymilk, put it all in a blender and whaddya get? Ice cream! This combination is perfect and comes out like soft serve. I added some shaved dark chocolate on top for a guiltless dessert.

Saturday - Fried Eggs on Homemade Wheat Toast
  • Can't seem to get enough of this little number lately. With a sprinkle of salt, pepper, and pepperjack cheese, I'd be content with this breakfast every morning.

In other news, I made a big change. After five years of growing out my hair, I finally made the cut! I was able to have eight inches lopped off as a donation to Pantene Beautiful Lengths. Pantene makes wigs from donated hair and then they are given to the American Cancer Society, where the wigs are donated for free to women facing cancer. Interested in donating? But first, here are some other hairstyles I have donned in the past 26 years, starting with one circa 1987, moving quickly to 2006, where I sported highlights and helmet head.
Onto San Francisco, where the wind took it away, and then had an identity crisis and dyed it to black (which faded to purple), at which point I wore headbands and hats.
Fast forward to 2007, where I could be spotted in more hats, headbands, and other dome-related paraphernalia.
2008 and 2009: The years of very long hair. Curly, straight, and braided.
In 2010, I was spotted with hair on both ends of the spectrum: fashion show hair and post-marathon hair.
2010 and beyond: More long curly hair, and a second identity crisis: bangs.
And finally, 8 inches, detached.

  5. I love your new hair cut! I donated 10 inches a few years ago to locks for love and felt so great to be able to do something like that.

    I bought a sushi roller last weekend - I need to read how to make sushi!
