A Real Fishy Kitchen Endeavor

Sometimes my attempts at kitchen creations are mediocre. Sometimes they are downright horrendous. I'll spare you the ugly details of my latest creative failure, but suffice it to say that it involved salad, sardines, and sauteed red onions. Take my advice - these don't really work well together. Or at all. But subconsciously, I must have had fish + salad on the brain, because I created this recipe that is probably one of the best on the blog.

Fresh Cod Cakes with Lemon Yogurt Sauce over Mixed Greens

1/2 lb fresh cod
1 1/4 cup whole wheat Panko breadcrumbs
2 medium eggs
2 Tbsp non-fat milk
1 Tbsp lemon juice
1-2 Tbsp canola oil
1/4 cup cilantro, chopped
salt and pepper to taste

Asparagus:
1 Tbsp lemon juice
1 bunch asparagus, trimmed

Salad:
2 cups mixed salad greens
1/4 cup shredded carrots

Yogurt Sauce:
3 Tbsp non-fat plain yogurt
1 Tbsp lemon juice
1 tsp olive oil

In a fry pan over medium heat, cook cod for 5-7 minutes until flaky. Keep pan hot and add 1 Tbsp oil. In a mixing bowl, add cod, eggs, breadcrumbs, milk and lemon juice. Mix well. Form small patties and when oil is hot, add patties, cooking each side about 2 minutes, or until browned.

For asparagus: Once you're done cooking off all the patties, put in 1 Tbsp lemon juice to deglaze pan and add in asparagus, cooking for about 10 minutes or until bright green.

For sauce: In a small bowl, whisk yogurt, lemon juice and oil together.

Serve cod cakes over salad greens, aside asparagus and drizzle with yogurt sauce.

And can I just say I don't know how I lived life without a salad spinner. I just ordered this Oxo one and can't believe how awesome it is. Salad spinner... you complete me.

And speaking of cod cakes, I'm reading "Cod." (Reading AND eating cod!) Has anyone read this Mark Kurlansky book? I've heard it's pretty awesome.

  1. I can't live without my Braun hand blender, It's awesome! This looks like a really tasty dinner. I'll give it a try. I like to use cod for fish tacos
