Homemade tortillas are the blam diggity. (Pam the Blam... any P90X'ers out there?)
Make with this:

2 cups masa + 1 1/4 cup water + pinch salt. Mix. Break into 16 balls. Mush between two pieces of plastic wrap with a rolling pin. Heat 1 minute, each side, in a dry ungreased hot pan.
Top your fabulous, oddly-shaped tortillas with leftover Eating Well barbecue pulled chicken spiffed up with a heavy dose of chile pepper, Borlotti beans, guacamole (heavy on the cilantro), and a sprinkle of reduced-fat Cabot cheddar cheese. A little of my favorite salsa would have been a nice addition, but the tacos were already gone before I even had a chance.

I have a huge bag of masa and know I need to make some homemade tortillas with it... good to see they sound so easy!
