Ginger Lime Iced Tea

Last week as I was perusing the produce section of the local supermarket, I wandered to the back to be surprised with three full racks of discount vegetables, all positioned on little green styrofoam trays wrapped ever-so-tightly in cellophane.

The discount rack at the supermarket is like the sale rack at the Gap: there's a lot of junk on it, but there are always some good finds if you look hard enough.

So after packing the cart with twenty or so packages of fruits and vegetables *almost* past their prime, I happily finished my shopping and loaded up the refrigerator with heads of broccoli, over a dozen oranges, lemons, orphan bananas, orange peppers, and a baker's dozen of limes.
Lurking in the previously scant produce drawer was a knobby piece of ginger that was bought a couple of weeks ago, waiting to be used. (I know no one some people can't bear the flavor or smell of ginger. I happened to love it. More for me.)

I had just the thing for my discount discoveries. Ginger Lime Iced Tea and Quick N' Dirty Pickled Ginger.

Ginger Lime Iced Tea

8 small, juicy limes
10 cups of water
2 Tbsp minced ginger
6 Tbsp honey

In a pitcher, add lime juice, minced ginger, and honey. Note: I put the ginger in a tea infuser so I didn't have to strain the tea afterward. Add water and steep for ten minutes. Remove ginger and add ice cubes.

This tea is surprisingly refreshing and serves me well as a recovery drink from P90X workouts.

  1. Yum! I'm also obsessed with ginger and LOVE limeade, so I think this would be right up my alley. I do get why people don't like ginger, but I happen to love it... When I get sushi, I always finish the ginger. Plus, it's so soothing for the stomach :)

  2. Ginger is totally offensive to me unless it's insanely pickled. However, I bought a huge knob of it a few weeks ago because I'm determined to find a way to like it. How long will it last in the fridge?

  3. I am a big believer in the discounted veggies section of the market. I hate the idea of perfectly good food getting thrown away and I love the idea of rescuing it. Thanks for posting this; the ginger lime drink looks absolutely refreshing.

  6. I'm a big fan of ginger as well. I'm using ginger to create my own ginger tea. Adding lemon and honey makes the tea taste even better. It's also an effective remedy for sore throat. In fact, ginger tea with honey and lemon is one of the sore throat home remedies I have on my list.
