To Dangle A Carrot

Convince. Tempt. Motivate with reward.

That's what red carrots and spicy peanut sauce will do to you.
I don't need to dangle any carrots in your face. These carrots, and the following recipe are that good.

Red on the outside. Orange on the inside. A sweet crunch that does not even compare to a store-bought carrot. Stillman's, you did it again.

Vegetable Lentil Rolls with Peanut Sauce

1 onion, chopped
2 cloves garlic, minced
2 Tbsp EVOO
3-4 carrots, thinly sliced
1 head of Napa cabbage, thinly sliced
2 Tbsp lite soy sauce
1 Tbsp turmeric
1 tsp ginger powder
1 Tbsp cumin
1 package (8 oz.) Trader Joe's fully cooked black beluga lentils
vegetable spray/vegetable oil

Preheat oven to 350 degrees. Saute onions and garlic in EVOO in pan over medium heat until fragrant and onions are translucent. Add in carrots and cabbage and stir-fry until the cabbage begins to wilt. Add spices, soy sauce, and lentils. Stir until mixed. Put 1-2 Tbsp mixture in an egg roll wrapper. Wrap it up, spray with vegetable spray or brush with vegetable oil and line rolls in a pan, and bake for about 15 minutes, or until egg roll wrapper starts to brown. You may need to flip them over half way through.
Serve with Eating Well's spicy peanut sauce. I nixed the Sriracha sauce, just because I didn't have any. It was just as good.

Think cayenne pepper-sprinkled PB&J meets a soy sauce-covered coconut. Sweet, salty, savory and spicy. Everything you could ever ask for.

You could say I was impersonating a vampire. Tim, on the other hand, dressed up as a vegan. Vegans have the tastiest blood.

I was too busy carving awesome pumpkins to come up with a better, more creative costume.

    Weird flavor combos? Well, I'm puerto rican and some of our traditional foods have some interesting food combos. There's this one dish called Pastelon, which is actually put together like a lasagna. It has a layer of egg (on bottom and on top like a thin omelet,) satueed beef, green beans and plantains so it's like a sweet/savory thing. (I actually just Googled it and there are different variations but this is how my family makes it)It sounds gross but it's SOO GOOD. (not being baised or anything)
