Saturday's Fine Fare

Last evening, TC and I did a moonlight hike at Sholan Farms. What a difference it is to hike by moonlight! Besides the swaths of mosquitoes swarming TC, it was quite enjoyable. Here's a view of the backside of the Farm and the gazebo that was erected a couple years ago.
Ever feel like you spend the entire day cooking? I felt that way today... I loved it!

Breakfast: Dean's Beans coffee, 1 Country Hen fried egg (yes, yolk included! That's where the good stuff is), 1 sliced nectarine, and a slice of Iggy's whole wheat sourdough bread with Trader Joe's almond butter.


Lunch: TC and I shared garden salad greens & goat cheese salad with Amy's California veggie burgers. I've tried many veggie burgers, and nothing compares to these. Amazing!



So I recently have set myself up on a half-marathon training schedule. My race is in 10 weeks, so that puts me 2 weeks behind already. After lunch, I biked to the park. Today's agenda included a 5K race. Well, instead of signing up for one, I visualized running in a pack and was off. Not exactly what my training schedule intended, but still OK. I biked home, but stopped at Hannaford for some dinner fixings. Salmon, peppers, onions, cheese, and walnuts: how could you go wrong? Talk about packing an omega-3 punch!

Dinner: Grilled wild salmon, Paparadelle's harissa fetuccine (a product of Colorado!) with grilled peppers and onions, and Rao's stewed tomatoes. We topped the fetuccine with toasted walnuts and fresh grated parmesan.


For dessert, I made watermelon-papaya slushie. It was a cool and refreshing dessert after a delicious meal!

Watermelon-Papaya Slushie

4 cups watermelon
1 cup papaya (I used Trader Joes frozen papaya)
2 cups ice

Blend all ingredients together in a blender. Serve with a sprig of mint. (Vodka optional.)





Today was super-windy... I hope it stays this way. TC and I are taking the Sunfish sailboat out on the lake tomorrow and would really appreciate a good breeze!
