The Chips Are Down

The other night, I took a gamble with my leftover kale and attempted a recipe called "Kale Chips". Essentially, they have been compared to potato chips. I was a bit leary of this comparison, but figured I'd give it a try. Surprisingly, they came out delicious! They can be eaten as a side dish to many entrees. They are crisp, light, and crunchy: also full of good nutrition that you wouldn't get in a bag of potato chips.

Kale Chips

1 bunch of kale (or swiss chard), de-stemmed, cut into bite-sized pieces
olive oil
salt
pepper

Preheat the oven to 375 degrees. Mix bite-sized pieces of kale in a bowl with olive oil. Be sure all chips are coated. Line the chips on a sheet pan, and sprinkle sea salt and fresh ground pepper over the top. Bake in the oven for 15 minutes, or until the edges of most of the chips are turning brown and crisp. For maximum pleasure, eat immediately!
